Quick and Easy Sheet Pan Chicken & Veggies Recipe

What follows is an easy recipe for making one of my favorite quick and delicious chicken meals: sheet pan chicken and vegetables. It takes about 60 minutes to prep and cook. (Consider doubling the recipe for easy leftovers/lunches.)

Note that this recipe is for bone-in chicken pieces; if you are using boneless breasts or thighs, you can shorten the cooking time by at least 10-15 minutes.

Makes 4 servings.

Ingredients

  • 1 package of organic (ideally pasture-raised) cut-up chicken

  • 1/2 of an organic onion (sliced)

  • 2 organic garlic cloves (sliced)

  • 1 red/orange bell pepper (sliced/chopped)

  • 1 cup of mushrooms (chopped)

  • 1 organic zucchini (sliced)

  • 1 cup organic green beans (cut)

  • Spices (including salt and pepper, rosemary, and organic poultry seasoning)

  • Pure avocado oil

  • Optional: Adding any other veggies you love; subtract the ones you don't like

  • Optional: Other veggie options include carrots, potatoes, broccoli, and cauliflower

  • Optional: Instead of a whole chicken, use your favorite chicken pieces

Directions

  1. Preheat oven to 425 degrees.

  2. Line one large or two medium baking sheet pans with unbleached parchment paper.

  3. Place the chicken pieces on the pan, sprinkle spices, and place in the oven for 35 minutes.

  4. Prep all the vegetables by cutting them to your desired size.

  5. In a medium bowl, mix 1 tablespoon of avocado oil with all the veggies and spices.

  6. Take the pan with chicken from the oven and mix in the ingredients from the bowl.

  7. Place the sheet(s) back in the oven, and cook for an additional 20 minutes.

  8. Before removing from the oven, use the broiler to lightly brown the chicken and veggies.

  9. Remove from the oven and plate the chicken pieces.

  10. Stir the veggies remaining in the pan to soak up all the juices, and then add to the plated chicken.
