Here's a modern, healthy, and keto twist on the classic spaghetti and meatballs, but without the toxic white pasta. Uses grassfed beef and organic cheese.

A truly fun, easy, and quick meal for all.

Makes 5 servings, about 20-22 meatballs, depending on size.

Prep time is about 15 minutes; with another 45 minutes of cooking time.

Ingredients

Meatballs:
  • 2 pounds of grassfed ground beef (or try organic chicken or turkey)

  • 1 cup of organic shredded cheese. (We use the "Mexican" blend, but mozzarella is also a favorite.)

  • 1 cup of shredded organic zucchini

  • 4 cloves of garlic, minced

  • 1 organic/pastured egg

  • 2 teaspoons of minced onions

  • 3 teaspoons of minced garlic

  • 2 teaspoons of garlic

  • 1 teaspoon of rosemary (ideally fresh)

  • Salt and pepper to taste

Sauce:
  • 1 28-ounce can of organic crushed tomatoes

  • 3 cloves of garlic, finely chopped

  • 1/2 small onion, finely diced

  • 1/4 cup of extra virgin olive oil

  • 1/2 teaspoon oregano

  • 1/2 teaspoon rosemary

  • 1 teaspoon of crushed red pepper flakes

  • Salt and pepper to taste

Topping:
  • 1 8-ounce shredded cheese (Italian or Mexican)

Directions

  1. Preheat oven to 400 degrees.

  2. Spray or coat a casserole dish with avocado/olive oil.

  3. Combine all the ingredients for the meatballs and mix thoroughly.

  4. Using a tablespoon or small ice cream scoop, form about 20-24 meatballs and place them in the casserole dish (or two smaller dishes).

  5. Bake for 30 minutes, remove from the oven, and drain off excess liquid.

  6. While the meatballs are cooking, get a medium saucepan for preparing the sauce.

  7. Sauté garlic and onion in olive oil. Brown, but do not burn.

  8. Add the tomatoes, salt, pepper, and herbs to the saucepan. Let simmer for 5-10 minutes, allowing the sauce to thicken.

  9. With the sauce completed, pour it over the cooked meatballs from step 5, and add the shredded cheese topping.

  10. Place the casserole dish back in the oven and bake for an additional 10-15 minutes, or until the cheese is nicely melted.
