Delightful, Spicy, Keto-Friendly Thai Red Chicken Curry Recipe

What follows is a very easy recipe for making the best all-natural spicy red curry chicken -- with no added sugars, preservatives, or other ingredients.

It takes about 10-15 minutes to prepare and another 15-20 minutes to cook.

Ingredients
  • Avocado or coconut oil

  • 1 large organic onion, diced

  • 2 organic red, yellow, orange peppers, diced

  • 1" of ginger root, cut into tiny pieces (do not peel ginger root)

  • 3-4 garlic cloves, crushed (depending on how much you like garlic)

  • 2 cans of organic coconut cream

  • 1 block of organic creamed coconut, 7 Ounce Box (for added creaminess)

  • 2 organic chicken breasts, cut into small pieces

  • 2-3 tablespoons of red curry paste

  • 1/2 teaspoon cayenne pepper

  • 1/4 teaspoon chili powder (optional)

  • 2 teaspoons basil

  • 4 teaspoons liquid coconut aminos

  • 1 lime

  • 1 can of bamboo shoots

  • 1 8-ounce package of mushrooms, sliced

  • 1 teaspoon Himalayan sea salt to taste

  • Optional: Water chestnuts for more crunch

Directions
  • Using a large pot, cook chicken in avocado (or coconut) oil; set aside

  • Saute mushrooms; set aside

  • Saute peppers for 2-4 minutes; set aside

  • Saute onion, garlic, ginger, cayenne pepper

  • Add in the remaining ingredients: coconut cream, chili powder, coconut aminos, basil, bamboo shoots

  • Return mushrooms, peppers, and chicken to mix

  • Simmer lightly for 6-10 minutes

  • Let cool for about 5 minutes; squeeze lime, stir, and serve

  • (Add additional cayenne pepper or curry paste to raise the "heat")

Consider other options; for Thanksgiving, we used organic turkey breast rather than chicken breast. We also add an 8-ounce organic riced broccoli to enhance the curry. And in the most recent version, we also added dried Aronia berries (a super antioxidant).
